Broccoli Cheese Rice Casserole

This dish has been a favorite in our home for years. My husbands grandmother used to make this every Thanksgiving and Christmas for him. I hope you enjoy!

Ingredients:

  • 1 stick of butter
  • 1 (16 ounces) frozen chopped broccoli
  • 1 can Cream of Mushroom Soup
  • 1 jar of Cheese Wiz
  • 1 1/2 cups of rice (cooked)
  • 8-12 diced jalapenos
  • Dash of milk


In a skillet, melt the stick of butter. Then add the entire bag of frozen broccoli and cook until thawed. In a separate pot cook the rice.

Add the cheese wiz (leaving a small amount in the jar to use as topping), cream of mushroom soup, diced jalapenos (optional) and salt and pepper to the broccoli. At this point you can add a very small dash of milk if needed.

Combine the rice and broccoli mixture and add to a casserole dish. Use the remaining cheese wiz to spread ontop of the casserole.

Bake at 375 degree for 8-10 minutes.

Spinach Sqaures

This is one of my favorite recipes that I want to share with yal. This recipe makes a large batch that freezes perfectly and is ALWAYS a hit at parties or family gatherings. Try this recipe, trust me!!
2 tablespoons butter
3 eggs
1 cup all-purpose flour
1 cup milk
1 teaspoon baking powder
1 pound shredded Pepper Jack Cheese
2 (10 ounce) packages frozen chopped spinach
1 tablespoon minced onion
1 teaspoon salt

Start off with thawing the spinach in the sink or large bowl. Make sure you give yourself several hours for this step. Once the spinach is thawed, ring out as much juice from it as you can. Place the spinach in your stand mixer and turn it on to low speed. This will help to break apart the spinach.
Next, add in one cup of flour. Turn your mixer on again for about 60 seconds. Allow the flour to beat into the spinach. Next, add in your 1 pound of shredded Pepper Jack Cheese. Again turn on your mixer and allow the ingredients to blend in together. The mixture is going to seem very dry at this point.

Next, add in your eggs one at a time. The the milk. Once all these ingredients are well incorporated, you can add the remaining ingredients (onions, baking powder, salt) Mix together.
Next, place the butter in the bottom of a 9X13″ baking dish and put it into your preheated over (350 degree’s) for about 8 minutes, or until the butter has melted completed. Take the dish out (careful, its hot!) and add your batter to the dish. Allow the butter to come up and over the batter and spread around the batter and butter until its evenly placed in the dish.
Bake at 350 degree for about 35-40 minutes, depending on how fast your oven bakes.
Allow to cool completely before cutting, ENJOY!!!

4th of July Flag Dessert

This is an awesome substitute for the traditional flag cake most people make for 4th of July. Hope you enjoy!
Ingredients
1 cup flour
1 cup chopped pecans
1/2 cup butter (softened)
1 (8 ounce) package cream cheese (softened)
1 cup confectioners sugar
1 tub (8 ounce) frozen whipped cream (softened)
1 package (5.1 ounces) vanilla pudding
1 1/2 cup cold milk
1/2 cup blueberries
3 cups strawberries
Combine flour, pecans and butter. Press into the bottom of a 9X13 inch baking dish and bake at 350 degrees for 20 minutes allowing to cool completely. Next combine the cream cheese with the confectioners sugar, then mix half the tub of whipped cream. Next combine the vanilla pudding and milk.
Layer the cream cheese mix ontop the pecan crust, then add the vanilla pudding. Finish with the remaining whipped cream.
Use the blueberries and strawberries to complete an American flag theme on top the dessert.
